Cooking Instructions
- 1
Pat the chicken dry with paper towel and season with salt and pepper.
- 2
In a large ovenproof skillet with a lid, heat oil over medium-high heat. Add chicken pieces and sear in batches 5 to 7 minutes per side. Transfer chicken to a plate.
- 3
Preheat oven to 375F.
- 4
Add artichokes and garlic to pan, adding more oil if needed, and cook, turning occasionally, about 5 minutes. Stir in tomatoes and red pepper flakes; cook 1 minute more.
- 5
Pour in wine and stir in olives, rosemary branches and grated zest. Return chicken to pan. Bring liquid to a simmer.
- 6
Cover pan and transfer to oven. Cook until chicken is tender, 30 minutes.
- 7
Transfer chicken to a plate and place skillet over medium-high heat. Simmer until pan juices thicken and become saucelike, about 10 minutes. Return chicken to pan and sprinkle with cheese. Adjust oven heat to broil and place pan in the oven until cheese is melted and golden, 2 to 3 minutes. Squeeze lemon juice over pan and serve garnished with parsley.

Braised Chicken With Artichokes and Olives Braised Chicken With Artichokes and Olives
This dish is another delicious one. Artichokes are not always in season so I used canned artichoke hearts and the result was equally good. You can serve this dish with rice, but it would be wise not use a very flavored rice (Mexican, Caribbean, etc). The sauce is wonderful but you don't want the flavored rice to overpower it.PS: Rosemary is essential to this recipe, don't skip it!! PaulN -

Braised chicken and olives Braised chicken and olives
Cooking is at its funnest when you're being creative. Like when you take a bunch of ingredients you think will work together and throw them into a pan to see what happens. Sometimes it won't work, often it does, and on rare occasions it comes out absolutely amazing. This dish definitely falls into the latter. I took some Mediterranean ingredients, reminiscent of puttanesca, and threw them into a chicken braise instead. The resulting dish was rich, nuanced, loaded with juicy olives and succulent chicken, and totally, satisfyingly delicious. Robert Gonzal -
