Tuna Mayo & Mixed Beans Salad

The mixture of Canned Tuna, Japanese Mayonnaise and a little bit of Soy Sauce is delicious, and it can be used for a variety of dishes, particularly for salads. I often mix Edamame Beans (young Soy Beans) with it, but today I added Canned Mixed Beans as well. It turned out a delicious and nutritious salad. And it didn’t cost me much.

Ingredients

3 to 4 Servings
  1. 1/2Continental Cucumber *about 100g, cut into small pieces
  2. 1/8Red Onion *finely chopped
  3. 1/2 cupEdamame Beans *thawed if frozen
  4. Salt & Black Pepper
  5. 1 can (95 g)Tuna *I used Tuna in Springwater, drained
  6. 2-3 tablespoonsJapanese Mayonnaise
  7. 1/2 teaspoonSoy Sauce *alter the amount to suit your taste
  8. 1 can (400 g)Mixed Beans *drained

Cooking Instructions

  1. 1

    Place Cucumber, Red Onion and Edamame Beans in a mixing bowl. Season with Salt and Black Pepper. Freshly ground Black Pepper is the best.

    Add Tuna, Japanese Mayonnaise and Soy Sauce, and mix to combine. Taste it, you might need to add extra Salt & Black Pepper.

  3. 3

    Add drained Mixed Beans and combine.
