Lee's Herbed Summer Squash
A little more lighter way of enjoying yellow summer squash.
Cooking Instructions

Heat up butter and olive oil over medium hight heat. When ready, add squash and onion slices and saute for 7-10 minutes, or until most of the liquid is cooked out. Add garlic and Italian Herbs during the last minute. Add salt and pepper to taste. When ready, add chicken stock and partially cover skillet.

Cook for an additional 5-10 minutes stirring occasionally, until squash reach desired level of tenderness. Add fresh chopped parsley when finished. Enjoy
