Ingredients

  1. 1000 gbaby Potatoes
  2. 400 gtrimmed green Beans
  3. 120 gLettuce
  4. 400 gmini plum Tomatoes, halved
  5. 1Onion, peeled and diced
  6. 400 gcanned Chickpeas, drained and rinsed
  7. 400 gcanned Red Kidney Beans, drained and rinsed
  8. 85 mlOlive Oil
  9. 45 mlLemon Juice
  10. 30 mlground fresh Garlic
  11. 5 mlPaprika
  12. 4 mlCumin
  13. 2 mlChilli flakes
  14. Kosher Salt
  15. Ground Black Pepper

Cooking Instructions

    Boil baby Potatoes in large pot of water. Once Potatoes are cooked through, remove with a slotted spoon and set aside.

    Place green Beans in the pot of water and boil for 4 minutes. Remove the Beans from the boiling water and place in a bowl with ice water.

  3. 3

    Place Lettuce into a salad bowl. Half the Potatoes and add to the salad bowl. Add Tomatoes, Onion, green and red kidney Beans with Chickpeas.

    Mix Olive Oil, Lemon juice, Garlic, Paprika, Cumin and Chili in a separate bowl.

    Combine the Salad, Dressing and season with Salt and Pepper.
