Long-Lasting Crispy Fried Bananas

Smart Mama Vlog

This recipe is perfect for selling because it stays crispy even when cold.

This is the best fried banana recipe I've ever made. It's crispy without being hard or hurting your teeth, and the crispiness lasts a long time. Even when cold, it's still crunchy and not soggy. The outside is savory and crispy, while the inside is soft, tender, sweet, and slightly tangy from the bananas. It's especially delicious during the rainy season.

Ingredients

  1. 1/3 cupall-purpose flour (about 50 grams)
  2. 1/3 cuptapioca flour or cornstarch (about 50 grams)
  3. 2/3 cuprice flour (about 80 grams)
  4. 1/2 teaspoonbaking powder
  5. 1/4 teaspoonvanilla powder
  6. 1/4 teaspoonsalt
  7. 2 tablespoonsgranulated sugar (adjust to taste)
  8. 1 cupwater (about 250 ml)
  9. 2 1/2 tablespoonsmelted margarine (about 35 grams)
  10. A fewdrops of yellow food coloring
  11. 2plantains

Cooking Instructions

  1. 1

Mix all the dry and wet ingredients together until well combined. Let it rest for 10-15 minutes.

  2. 2

Cut each banana into 10 slices.

  3. 3

Dip the banana slices into the thick batter, then fry in preheated oil. Use medium-low heat. Once the bananas float, drizzle a little thick batter over them, then immediately flip to make it stick. * Don't pour too much thick batter, as it can become hard.

  4. 4

Make a thin batter from the thick batter.
3 ladles of thick batter + 2 ladles of water (90 ml thick batter + 30 ml water). Adjust the thin batter's consistency to your liking.

  5. 5

Pour the thin batter slowly, leaving some space between each pour. If you want more crispiness, pour 2-3 times. After each pour, immediately flip the bananas to make sure the crispiness sticks.

  6. 6

If any bananas stick together, separate them. Fry until golden brown, then drain.

  7. 7

Add toppings like sweetened condensed milk, sprinkle with palm sugar powder, cheese, and chocolate sprinkles. You can also add glazes like tiramisu, green tea, strawberry, etc.
