Kids' after-school favourite salad. One of the few that they like best. It's light, savoury and creamy at the same time. For a complete meal, we sometimes add their favourite protein, meat or chicken. Caesar salad can be prepared in many ways. Ours is usually very simple, made with whatever available in the pantry. This time tried caesar dressing from Nagi's recipe tin.

Ingredients

  1. A. THE SALAD 🥗
  2. Lettuce - clean and cut
  3. As needed- Croutons (Click on the link)
  4. As needed- Freshly shaved or grated parmesan cheese
  5. B. SALAD DRESSING 🥣
  6. 1 cupcreamy Mayonnaise
  7. 1/2 tspgrated garlic
  8. 1-2anchovy fillets - mashed into paste with spoon - substitution: fish sauce
  9. 2 tbspLemon juice
  10. 1 tspDijon mustard
  11. 1 tspWorcestershire sauce
  12. 1/2 cupgrated parmesan cheese
  13. 3-4 tbspmilk (adjust consistency)
  14. 1/4 tspGround white pepper powder
  15. 1/4 tspSalt

Cooking Instructions

    Prep all ingredients listed in A (for the salad). Wash and then cut lettuce into small pieces. Dry using salad spinner or leave to dry completely so they coat well with the dressing.

    Whiz all ingredients listed in B (for salad dressing) in food processor until smooth. Taste & adjust salt, pepper and adjust the consistency of the dressing (using milk) to your liking.

    Alternatively, you can also mash the anchovies using a spoon and whisk everything until well combined.

    Rest for 20mins.

    To assemble:

    Place lettuce in a bowl with 1/2 of the dressing. Toss well, taste and decide if you need to add more dressing. Transfer to a serving bowl, top with croutons, shaved parmesan cheese and protein of your choice like meat, chicken or eggs.
