Onset of winter brings tasteful veggies. I love any kind of Upma. Today, I prepared Cauliflower Sooji Upma and it's very delicious as well as lasts longer. I always make sure not to include chutney with Upma, while traveling. Rather prefer to add some fruits/ dry fruits along with Upma.

Ingredients

20 minutes
2-3 servings
  1. 2 Tbspgroundnut oil
  2. 1/2 Tspponch phutan
  3. 1 pinchhing powder
  4. 8-10curry leaves
  5. 1 Tspchana dal
  6. 1 Tspurad dal
  7. 1 Tbspgroundnuts
  8. 1/4 cupchopped onion
  9. 1/2 Tspgrated ginger
  10. 1 Tspchopped green chilli
  11. 1dry red chilli
  12. 1 cupcauliflower florets
  13. 2tomatoes chopped
  14. Salt to taste
  15. 1/4 Tspturmeric powder
  16. 1/2 Tspsambar powder
  17. 1 cuproasted sooji
  18. 2.5 cupwater
  19. 1/2 Tsplemon juice

Cooking Instructions

    Heat oil in a kadhai. Add hing and ponch phutan and let them splutter. Add curry leaves, chana dal urad dal, groundnuts and fry on low flame. Mix dry red chilli, green chilli, onion and ginger. Saute till rawness is gone.

    Add cauliflower florets and cook till half done. Mix water, sambar powder and allow to boil. Mix chopped tomatoes and cook till softened.

    Slow down the flame and add roasted sooji little at a time to prevent lump formation. Cook continuously till water is absorbed. Add lemon juice and mix well.

    Switch off the gas stove, cover kadhi with Upma for five minutes and then serve hot the tasty Cauliflower Sooji Upma with Pomegranate seeds.
