Cooking Instructions

Slice the onion along the grain and separate the layers by hand.

Mince the garlic.

Cut the pork belly into 3-4 inch pieces and set aside.

Prepare the marinade: Mix 1 tablespoon soy sauce, 1 tablespoon rice wine, 1/4 teaspoon sugar, and 1 tablespoon water.

Add the pork slices to the marinade, mix well, and let sit for 15 minutes.

Add 2 teaspoons (10ml) of oil. If using a traditional iron pan, it's recommended to season the pan first. My method for seasoning the pan (to reduce sticking): 1. Heat the pan on high for about 10-15 seconds. 2. Pour in the oil and swirl it around to coat the pan evenly. Remember to maintain your pan regularly!

Add the onions and stir-fry over medium-low heat until soft and they release moisture.

Add the minced garlic.

Add the pork.

Stir-fry the pork over medium-low heat until fully cooked.

Sprinkle with coarse black pepper to taste and mix well.
