  2. Pork (loin): 4.5 oz (130 grams)

  5. Rice wine: 1 tablespoon (15ml)
  6. Sugar: 1/4 teaspoon (1.25ml)
  7. Water: 1 tablespoon (15ml)

  9. Garlic: 0.5 oz (15 grams)
  10. Coarse black pepper: to taste

    Slice the onion along the grain and separate the layers by hand.

    Mince the garlic.

    Cut the pork belly into 3-4 inch pieces and set aside.

    Prepare the marinade: Mix 1 tablespoon soy sauce, 1 tablespoon rice wine, 1/4 teaspoon sugar, and 1 tablespoon water.
