Ingredients

4 - 6 persons
  1. For frying egg plant
  2. Oil according to egg plant for fry
  3. 1/2 kgegg plant slices
  4. For masala:
  5. 4 tbspoil
  6. 1 tspgarlic ginger paste
  7. 1 tspsalt
  8. 1/2 tspturmeric powder
  9. 1 tspzeera powder
  10. 1/4 tspgaram masala powder
  11. 1 tspcrushed red chillies
  12. 1 tspchat masala
  13. 1 tspcoriander powder
  14. 1 tspred chilli powder
  15. Water as required to bhonify
  16. Tarka:
  17. 4 tbspoil for tarka
  18. Some curry leaves
  19. 6round red chlies
  20. 1 tspzeera
  21. 375 gmyogurt (1 pao + adha pao)

Cooking Instructions

    Cut egg plant into slices

    Fry egg plant until turns into light golden.

    Heat oil in fry pan add garlic ginger paste & fry for a minute.

    Add spices.

    Add some water to bhonify masala.

    In serving dish spread prepared masala then fried eggplants.

    Beat yogurt, spread yogurt over fried eggplants.

    Now 2nd layer again spread fried eggplants over yogurt & spread masala over eggplants.

    Again spread yogurt over masala & eggplants.

    Turn of traka.
    Heat oil add button red chilli crushed with yr hands, cumin seeds & curry leaves,fry for 1-2 min.

    Add tarka over yougard in serving dish. Enjoy✌
