A Salad with Tuna and Bitter Melon

It's not so bitter, so even kids will eat this. The salad has a lot of vitamins, so it's good for your skin when you get a sunburn in the summer.

Make sure you squeeze out the water from the bitter melon and the onion. Wrap the unused bitter melon with the seeds removed and store in the fridge. It'll keep for 2-3 days. It's also nice with miso and sesame (prepare the same way.) For 4 servings. Recipe by Nanamama

Ingredients

4 servings
  1. 1/2Bitter melon
  2. 1 canCanned tuna
  3. 1/2Onion
  4. 1/2 tspSalt
  5. 3 tbspMayonnaise
  6. 1 tspLemon juice

Cooking Instructions

    Slice the bitter melon vertically, remove the seeds and slice thinly. Rub with some salt (not listed). Boil water in a pot, add the bitter melon and when it comes to a boil, remove and drain. Soak in water, then squeeze out.

    Thinly slice an onion and soak in water for about 10 minutes. Drain and squeeze out the water with your hands.

    In a bowl, combine the bitter melon, onion, and tuna flakes and add mayonnaise and lemon juice. Taste, and add salt and pepper if necessary.
