Could not get fresh shitake. Soaked the dried mushrooms in 8 cup of hot water for 20 minutes to reconstitute. use it later in the sauce
Over medium heat bring 10c water to boil in a saucepan. Add 1tbsp salt, and 2tbsp oil. Add the noodles to boiling water. Stir now and then, so that noodles do not stick to each other. Do not over cook. It should be el dente. strain, Set aside the cooked noodles. save 1c water in which noodles were cooked

Over medium flame, heat olive oil in a kadai Saute onions when onions brown add green chilies, ginger, garlic—about 5 minutes. Add chopped bell peppers, saute 2 minutes. Stir in chopped tomatoes, cook until tomatoes get soft, about 8 mins. Add mushrooms, stir, continue cooking over medium flame for 5 more minutes,

Stir in the chopped herbs -basil, oregano, parsley, Sauce is ready Add the cooked noodles. mix. transfer the contents from the kadai to a microwave safe bowl. Sprinkle cheese on the top. Keep inside the microwave, cook until the cheese melts. Take the cheesy noodles out. Sprinkle freshly ground pepper on the top. Serve. if you like cheese you may sprinkle some more cheese on the noodle.
