It's an easy curry, which I could make quickly to feed my hungry kids.

It depends on the brand, but the curry roux has about 10 servings per packet. 1/4 of the packet should be fine.
You can use the vegetables you use when you normally make curry, or any that you like. This time, I topped the curry with a boiled egg. For 3 servings. Recipe by NO-KA

Ingredients

3 servings
  1. 300 gramsPork mince
  2. 1/2Onion
  3. 1/2Carrot
  4. 1Potato
  5. 2Bell pepper (if available)
  6. 1Eggplant (if available)
  7. 1Tomato (if available)
  8. 1 tspGarlic (tubed)
  9. 1 tspGinger (tubed)
  10. 3cubes Curry roux mix
  11. 1Cooking oil

Cooking Instructions

    Cut all the vegetables into 1 cm cubes. Put the carrot and potato in a heatproof bowl with a bit of water and microwave for 3-4 minutes.

    Finely chop up the curry roux blocks.

  3. 3

    Spread the oil in the frying pan and fry the garlic, ginger, meat and vegetables in that order. When they are cooked thoroughly, add the curry roux, mix well and it's done.

    You can skip Step 1 if you use a food processor. It'll chop the ingredients up very finely, so it'll make the curry even easier for small children and elderly family members to eat.
