Corn Tempura
When corn is in season, my family always requests this dish. It's a crispy, sweet tempura made from fresh corn. The origin of this recipe: I once saw a TV show featuring tempura made with fresh corn and wanted to try it at home. It's crispy and seasoned only with salt, which makes the corn taste incredibly sweet. This is a favorite recipe that gets requested every corn season.

Corn Potage Soup Made With Fresh Corn
Every year in the summertime, we receive a lot of corn as gifts from acquaintances. But I'm not very fond of the texture of the corn kernels, so I always end up making corn potage soup with it. When corn is not in season, I use store bought corn paste instead of fresh corn, but the intensity of the color, flavor, and sweetness is just not the same!!Use corn as soon as possible after picking. Any more than 3 days after harvest, and the flavor is not so good anymore. What we do at my house is to at boil all the fresh corn cobs, wrap them in plastic wrap and put them in the refrigerator. Alternatively you can remove the kernels and freeze. This year we received 22 ears of corn! We add potatoes only when we've got some that need to be used up, the soup is fine with out them too. Sweet Corn Soup
This is one of my absolute favorite ways to cook fresh sweet corn! It's so simple and really takes advantage of the corn's natural sweetness. Last summer I think almost of all of the corn I bought ended up being turned into this soup! If you use old corn or some that has dried out a little (wrinkly kernels), it won't turn out very good so I highly recommend using very fresh, in-season corn with plump kernels.

Creamy Mexican Corn
This is my favorite corn ever!!!! It is so good to me.

Indian Cauliflower and Bean Curry

Alligator chili and beans

Quick Dry Curry Starring Beans
As I was using pre-cooked beans, I wanted to make something quick! So I chopped the vegetables finely and made dry curry. You can fully enjoy the beans as they are bigger than the other ingredients.Cut the onion, carrot and potato evenly into 5 mm cubes. It tastes nice with corn as well. I recommend using a scum-removal sheet. Using this sheet, you can remove the scum and excess fat easily as the ingredients are very small pieces. Add 2 blocks of curry roux to start, and one more block if it's needed. For 4 servings. Recipe by Muuko

Bhutte ka Kees (Spicy corn dish)
This is a super yummy Indian street food, made with corn. In India locally available corn is not very sweet like sweet corn. So this dish tastes best made with local indian variety. As we do not get that here in Japan so I have modified the recipe to use sweet corn kernels and corn grits to get that same flavor and taste. Do give it a try.

Corn Silky String Soup
I found out that you can eat the silky strings of corn and decided to try using them like harusame noodles. In all honesty, they didn't really turn out like harusame noodles at all but I did like their crisp texture.Corn is often used as a diuretic and the silky strings can be found in all sorts of Chinese medicine so please give them a try.You can use the silky strings in tea but I also like using them as vegetables. Throwing them away is such a waste.By the way, it's a bit strange but this soup doesn't even taste anything like corn. Recipe by Eringo24

Shrimp, Edamame, and Corn Tempura Fritters
I became a recipe tester for a certain company, so I made these tempura fritters that my daughter would enjoy. It came out really light and crispy. Maybe it's because of the oil.You can use fava beans instead of edamame.Make sure to pat dry the shrimp and corn (I used canned corn) with paper towels. If they're wet, the frying oil may splatter. Deep Fried Fresh Young Corn
Since I didn't want to waste too many of this valuable short-season vegetable, I deep fried them in the corn silk. While deep frying, a heavenly aroma wafted up from the pan.Since the corn silk is not coated in the mixture, they will have a soft texture. Since they burn easily, deep fry over a low heat. I recommend serving them right out of the pan. Recipe by kebeibiko
