I got challenged to a chili cookoff at my church here in Las Vegas. So I thought people in the desert don't eat much alligator meat so I got and idea. Spent all night making it just to find out no one else decided to make anything. Oh well regardless at the father's day barbeque everyone had several bowls of this chili and are hitting me up for the recipe constantly. It's a new fan favorite that I recommend everyone attempt.

Ingredients

  • 1 lballigator meat
  • 1 lbground chuck
  • 1sweet onion med diced
  • 1green bell pepper med diced
  • 15 ozblack beans drained
  • 15 ozkidney beans drained
  • 32 ozcrushed tomatoes
  • 32 ozV8 tomato juice spicy hot
  • 2 tbspEvoo
  • sea salt
  • black pepper
  • 2 tspGhost pepper infused salt (optional)
  • 1 tbspCajun seasoning
  • 2 tspcayenne pepper
  • 2 tspcinnamon
  • 1 tspground ginger
  • 2 tbspchili powder
  • 2 tspcelery salt
  • 1 tbspmarjoram leaves
  • 1 tbspground cumin
  • 1 tbspsmoked paprika
  • 2chipotle peppers in adobe sauce, minced

Steps

  1. 1

    Oil large skillet with evoo and sweat onions and bell pepper at low heat until onions become translucent.

  2. 2

    Put all dry (excluding salt and black pepper) seasonings in a separate bowl and mix them

  3. 3

    Once onions are translucent transfer onions and bell peppers to crock pot

  4. 4

    Use skillet to cook the ground chuck and ground alligator meat, raise to med high heat and constantly fold in pinches of the salt and pepper until to desired taste and evenly brown.

    Add small amounts of dry seasoning mixture to developed flavor then add beans, crushed tomatoes, chipotle peppers to skillet and continually stirring and pinching in seasonings

  6. 6

    Once at a good simmer and flavor has reached desired level add mixture into crock pot with V8 juice and all remaining seasonings.

    Thoroughly mix and place at 2 and a half hours on low heat

  8. 8

    After done cooking give a taste to see if any additional salt, pepper, or spice would be desired, if so add, mix and simmer for 5 minutes then enjoy
