Here are some of the ingredients.

Heat the oil in a deep frying pan and add the onion. Cook over a medium heat for 5 mins until starting to soften.
- 3
Add the chorizo and cook for another few mins to release the oil.
- 4
Coat the onion in the chorizo oil, then tip in the tomatoes. Fill the can with water and tip that in too. Season and bring to the boil.
- 5
Once boiling, season the cod (or basa) fillets and nestle into the pan. Reduce the heat and gently simmer for about 7 mins.
- 6
Gently mix in the butter beans and cook for 1-2 mins more until hot. Scatter with parsley and serve in bowls.

Etouffee-inspired seafood stew Etouffee-inspired seafood stew
This was originally going to be a pretty straightforward shrimp etouffee, but our supermarket had a sale on fresh cod and scallops, and I couldn't resist. Despite the change in plan, the actual cooking process remained pretty much the same. The resulting dish was familiar yet different, and pretty darned tasty. A nice change from the usual chowder. I used red kidney beans & rosecoco beans in this, but they're easily interchangeable with other types of beans. This is great on its own, or make it go further with rice. If you have leftovers, try chopping the sausages before reheating and serving with salad & cheese in a wrap. justanothersoph -

Spicy Beef Mince and Bean Stew with Tomatoes Spicy Beef Mince and Bean Stew with Tomatoes
I use curry powder, so the resultant dish is not going to be very hot. I don't use consomme cubes and season with salt. You can use consomme cubes if you prefer. This dish has a rich flavour because the vegetables and curry powder are fried slowly. By frying the curry powder before stewing it gives a good flavour to the dish.If you use dried beans, use the cooking liquid at Step 6 instead of water to give extra flavour to the dish. Vegetable Stew Vegetable Stew
I used my left over vegetables . One egg plant was gone half bad, used my frozen tomatoes , and add a can of black beans. You can use any can of legumes ( chickpeas , white beans, but lentils would not be a good idea, )if you don’t want to use oven you can use same pot to cook if you are too lazy or have no time. . I think putting then to oven make taste better. Rae
