I usually make this with potatoes, but this time I used sweet potatoes.

Cooking Instructions

Chop the sweet potato into 2cm pieces and steam in a steamer for 20 minutes. (Or, microwave for 7 minutes.)

Salt and pepper the bacon and onions and microwave for 3 minutes.

Peel the potatoes while they're hot and crush into bite-sizes. Combine with the onion and bacon from step 2 and ● ingredients, and mix everything together.

Here is a variation with broccoli - lots of calcium.
