Ingredients

4 servings
  1. 2Pears
  2. 3to 4 tablespoons Coarsely chopped walnuts
  3. 2to 3 tablespoons Feta or blue cheese
  4. 1Salad leaves (endives, radicchio, arugula (rocket), mizuna etc.)
  5. For the dressing:
  6. 1 1/2 tbspWhite wine vinegar
  7. 1Egg yolk
  8. 1/2 tspDijon mustard
  9. 5 tbspOlive oil
  10. 1Salt ・ pepper

Cooking Instructions

    Put the * ingredients in a bowl and mix well. Add the olive oil little by little while whisking. Season with salt and pepper.

    Peel the pears, and cut in half lengthwise.

    Take out the core with a small spoon.

    Here it is, cored.

    Slice 5 mm thick. Put the salad leaves on a plate, add the pears, walnuts and finely crumbled cheese, and pour the dressing over.

    If you use pears that are a little bit on the firm side, they're easier to handle and have a nice flavor and texture to them.

    This is the feta cheese I used this time. Blue cheese is good too.
