Delicious and Multi-Purpose Tomato Sauce Delicious and Multi-Purpose Tomato Sauce
I love Chef Mamoru Kataoka's recipe and read that he sweats onions slowly for 1 hour. Up until then I made tomato sauce without cooking the onion for that long, but I tried it and I was struck by the difference in the depth of flavor of the sauce. If you sauté the onion slowly until a lot of flavor seeps out, you can make a delicious sauce without having to add a soup stock cube.Stirring the pot slowly while you're surrounded by the fragrance of the onion is a nice experience. Stewed Calamari in Tomato Sauce Stewed Calamari in Tomato Sauce
Squid/ Calamari is one of my favorite things to eat. Only if it is cooked right. I used to buy squid for my pops a few times a year and he would make a delectable calamari in a tomato sauce. It was so tender and flavorful. Sadly, I never got him to write it down for me, but he did say just cook it a long time. What did that mean?I tried to make it myself a few times, since he passed. They all failed. Too tough. Too fishy. Etc, etc, etc. Finally, my wife suggested that we should just let it cook for a long time. Who am I to say no to my wife and dad?We did just that, with some carrots. Wow! Not what my dad made, but he would have loved it nevertheless. If you like it saucy, then one pound of squid is just find. But if like a touch of sauce, then use two pounds of squid. The carrots may seem to be an odd touch, but they add to the amazing flavor. Hopefully, you will enjoy this as much as we did.Enjoy! J.A.B. -

Easy and Authentic Pasta in Tuna Tomato Sauce Easy and Authentic Pasta in Tuna Tomato Sauce
I don't like the flavor of tomato that much, but I love this pasta sauce. Each time I make this, I'm impressed every time that this flavor can be achieved in such a short time. The amount of salt to add depends on how much bacon you add, so taste before salting. The sauce will thin out a bit when you add the pasta, so season it generously. For 2 servings. Recipe by classy cookpad.japan
