Ingredients

  2. 3 lbsbeef chuck, trimmed and cut into 1 inch pieces
  3. 1onion, diced
  4. 30baby carrots, cut into 1/2 inch slices
  5. 5potatoes, cut into 1/2 inch pieces

  7. 2 1/2 cupsbeef broth
  8. 2 tbsptomato paste
  9. 1 tbspWorcestershire sauce
  10. 1/2 tbspbalsamic vinegar
  11. 1 tspdried thyme
  12. 1 tspsalt
  13. 6garlic cloves
  14. 1/4 cupflour
  15. 1 cuppeas

Cooking Instructions

    Add beef chuck, beef broth, 2 tbsp tomato paste, 1 tbsp Worcestershire sauce, 1/2 tbsp balsamic vinegar, 1 tsp thyme, 1 tsp salt, pepper, 6 garlic cloves, onion, carrots, and potatoes to slow cooker.

    Cover and cook on low for 7-8 hours or on high for 4-5 hours.

    Once cooked, remove 1 cup beef broth from slow cooker. Whisk in 1/4 cup flour until smooth. Add back to slow cooker and stir to combine.

    Add 1 cup peas and cook on high for 10-15 minutes until sauce thickens.

Good, but a bit dull, to our taste. Next time I’ll probably add more sauce, thyme and pepper.
