Prepare the pork
- Cut into small pieces
- Soak in salt water for 5 minutes, then rinse 2-3 times with clean water. Drain well - 2
Marinate the pork (5-8 minutes)
- Place the drained pork in a bowl
- Season with: 3 minced shallots, 3-4 tablespoons fish sauce, 1 tablespoon sugar, 1/4 tablespoon MSG. - 3
Caramelize the pork (8-10 minutes on medium heat)
- Heat a pan
- Add 3-4 shallots and stir until golden
- Add a tablespoon of sugar and stir until it turns from yellow to brown
- Add the marinated pork to the pan and stir well.
- Pour in 1 cup of water, add 4-5 tablespoons fish sauce. Keep on medium heat until the water evaporates. (8-10 minutes).
- Then add ground pepper and chopped chili to the pork. (If available)
