Clean the pork and cut it into bite-sized pieces. Marinate with salt, MSG, and garlic powder.

Add a small amount of cooking oil to a pan, just enough to coat the surface, then add the pork and stir-fry briefly. The pork will release fat. Cover and cook for 5 minutes on medium-low heat until one side is browned, then flip to brown the other side evenly.

If there's too much fat, you can remove some, then add chopped onion and garlic to the pan and sauté until fragrant. Add fish sauce, sugar, and pepper, and stir to coat the pork.

Add chopped green onions, turn off the heat. The caramelized pork is ready. Add sliced chili if you like it spicy.
