Ingredients

  1. 1 cupred poha
  2. 1/2 tspmustard seeds
  3. 1/2 tspcumin seeds
  4. 1 sprigcurry leaves
  5. 1 medium potato diced small
  6. 8-10garlic cloves chopped
  7. 1" piece of ginger chopped
  8. 1-2chopped green chillies
  9. 1 medium onion chopped
  10. 1 medium tomato chopped
  11. 1/4 cupchopped carrots
  12. 1/4 cupgreen peas
  13. 1 tspsalt or to taste
  14. 1/2 tspKashmiri red chilli powder
  15. 1 tspcumin powder (jeera)
  16. 1 tspcoriander powder (dhania)
  17. 1 tspamchoor (dry mango) powder
  18. 1/2 tspturmeric powder
  19. 3 tbspoil
  20. 1 tspsambhar masala powder
  21. 2 tbspchopped coriander leaves
  22. Juice of 1 lemon

Cooking Instructions

    To begin, wash the red poha well in running water and allow it to drain completely. Be careful it should not turn mushy.

    Heat oil in a pan. Add in the chopped potatoes. Saute until they are cooked and colorize a bit. Remove and keep aside.

    Add in mustard seeds and cumin seeds. Allow them to crackle. Add in the curry leaves.

    Next, add the chopped garlic, ginger, and green chillies. Saute for a minute.

    Add half of the chopped onions. Cook until translucent.

    Add in the potatoes and vegetables. Cook until a bit tender.

    Next, add the dry masalas - salt, Kashmiri red chilli powder, turmeric powder, cumin powder, coriander powder, and amchoor powder. Mix.

    Now add the moistened poha and mix well.

    Add in the remaining onions and tomatoes. Mix. I prefer adding the tomatoes now or they turn mushy. Cover with a lid and cook on low heat for 2-3 minutes.

    Finally, add the sambhar masala powder, coriander leaves, and lemon juice. Mix.

    The Nut-Free Red Rice Kanda Poha is ready to serve. Garnish with chopped coriander leaves and serve hot.
