Bean and Bacon Soup Crockpot

This came about by a cold winter mountain day after Thanksgiving, and craving a nice warm soup. Unfortunately, due to allergies I cannot have store brought soup so I decided to try my hand at a beand and bacon soup, because I loved it as a child until I got deathly ill and developed allergens.

Ingredients

6 to 8 hours + overnight
Family Sized
  1. 1 lbdry northeastern beans
  2. 2 cansblack beans
  3. 1 pkgbacon
  4. 1ham hock
  5. Soup base
  6. 64 ozchicken stock
  7. 1 cantomato paste
  8. 4 dropsliquid smoke
  9. For the Food Processor
  10. 1big bag of baby carrots
  11. 1 bunchcelery
  12. 1onion
  13. 8 clovesgarlic
  14. Misc. Ingredients
  15. 4bay leaves
  16. Salt
  17. Pepper

Cooking Instructions

6 to 8 hours + overnight

    Soak the dry Northeastern beans overnight in a bowl

  2. 2

    Chop bacon to bite size pieces and fry it. Set aside on a paper towel

  3. 3

    Add soup base ingredients to crockpot and mix to blend the tomato paste

  4. 4

    Drain black beans and soaked beans

  5. 5

    Add beans, ham hock to crockpot

  6. 6

    Peel your onion and cut in quarters. Peel garlic. Prep celery and chop to fit in food processor

  7. 7

    Toss your celery, onion, garlic in food processor and run til minced. Add to crockpot

  8. 8

    Add carrots to food processor and chop til very small pieces, like pea sized. Add to crockpot

  9. 9

    Add bacon to crockpot. Gently stir everything together. Add bay leaves

  10. 10

    Cook on low 6 to 8 hours or until beans are done

  11. 11

    Remove bay leaves and disgard. Turn crockpot to keep warm

  12. 12

    Remove ham hock. Cool just enough to handle. Cut meat off hock and chop to bite size

  13. 13

    Add meat back to crockpot and disgard the ham hock bone

  14. 14

    Remove some soup and blend it. Add back to the soup and stir to get a creamy texture

  15. 15

    Salt and pepper to taste. Serve
