Quick and Easy Banana Bread

When you suddenly feel like baking, you want a simple banana bread without any hassle. The story behind this recipe: As a busy parent, I rarely have time to bake freely. Sometimes I give up because the butter or eggs aren't at room temperature. So, I tried microwaving the butter and using cold eggs, and it turned out just fine! The bread was fluffy, moist, and delicious, so I made it into a recipe.

Cooking Instructions
- 1
Grease the pan with oil. Soften the butter in the microwave for about 20 seconds. Preheat the oven to 340°F. The batter comes together quickly.
- 2
Mix the softened butter with a whisk until creamy.
- 3
Add the light brown sugar to the butter and mix well.
- 4
Gradually add the beaten egg to the mixture, mixing continuously.
- 5
Sift the dry ingredients marked with ★ into the mixture and gently fold with a spatula until just combined (stop mixing as soon as the flour is no longer visible).
- 6
Mash the bananas and add them to the mixture, stirring gently. The size and texture of the banana pieces are up to you. Do not overmix!
- 7
Pour the batter into the pan and bake at 340°F for 30-40 minutes. When pouring the batter, create a slight indentation in the center.
- 8
Once baked, remove from the pan and let cool. For extra moistness, wrap in plastic wrap after it has cooled slightly.
- 9
It's delicious even the next day after it has completely cooled. Freshly baked is also delightful. Store wrapped in plastic wrap or a plastic bag.
- 10
I added chopped chocolate and baked them in muffin tins for chocolate banana muffins.
- 11
Note: Using very ripe bananas with black spots enhances the flavor and aroma. Highly recommended!
- 12
Wrap it up as a gift or take it as a snack on outings.
- 13
Add walnuts for a variation.
- 14
Try different toppings.
- 15
This is how it looks when baked.
