This is our family's recipe.
The origin of this recipe: I often ate this for Saturday lunch when I was little.
Cooking Instructions

Note: Some have mentioned the seasoning is strong. If you feel there's too much soy sauce, add it gradually while tasting.

Cut the vegetables and pork into bite-sized pieces.

Heat oil (not listed in ingredients) in a frying pan, then add the pork and stir-fry.

Once the pork changes color, add the harder vegetables first and stir-fry until they soften. Once softened, season with salt and pepper.

Next, add the udon noodles. Pour the dashi stock over them, gently loosen the noodles, cover, and wait for 1 minute. (Once covered, reduce to medium heat.)

Uncover, add sake and soy sauce, increase to high heat again, and cook until most of the liquid evaporates.

Reduce to low heat, add bonito flakes, and mix so the flakes are evenly distributed.

Serve on a plate. Optionally, top with aonori seaweed or pickled ginger if desired.
