When you hear comfort food, this is what I like to tuck into with some grilled fish or chicken😋😋😋😋😋😋😋
Cooking Instructions

Peel the potatoes and cut into quarters lengthwise.

Add into salted water and boil for about 5-7 mins or till a fork can pierce through. You want the potato firm and not mushy or soft. Then drain in a colander and set aside.

Once the potato is cool, tip from the colander to a wide bowl and add the remaining ingredients and toss around. Then pour in your lined oven tray and bake for 20-25mins.

Rmbr to use your spoon to toss it around so all sides of the potato get crisp

For the beans: chop the peppers to your desired size and set aside.

Get a clean pot/pan and put on medium heat. Once it's hot, add the coconut oil and allow to warm up, once it's sizzling, add the onions, ginger, garlic and scotch bonnet and allow to sweat till the onion becomes translucent (try to ensure the garlic doesn't burn as well).

Add the sweet peppers and season as desired, then about 2mins, tip in your can of baked beans and allow to simmer for 3 to 4mins.

Then take off heat and serve with your potatoes....
