Horse Gram and Ragi Dosa

Horse Gram is one of the most nutrition rich grains which is high in protein, calcium, iron and vitamin B variants. It is also rich in fibre and antioxidants. Ragi is also a powerhouse millet of calcium and proteins. So the combination of these two is a complete meal .

Cooking Instructions

First, wash the horse gram and ragi 4 times thoroughly. Also wash the rice and fenugreek in a similar way.Then soak all separately for 4 to 5 hours.

First, drain and grind the horse gram with ragi till smooth adding a small amount of water in between. It will take 30 minutes in stone grinder and 10 minutes in a regular mixer grinder. When you get a smooth brown paste, transfer to a deep bowl

Then drain and add rice and fenugreek seeds. Grind it using a small amount of water. It will take a similar time as above.

When you have a white coarse paste of pouring consistency, remove and transfer and mix it into the ragi and horsegram mixture. Then add 1/2 tsp salt and mix the batter with clean hands till fluffy for 10 minutes.

Cover and keep for fermentation for 8 hours. When you see the mixture has puffed up, it gives a pleasant sour aroma, add salt, pepper powder (optional) and gently mix, do not break the air bubbles by vigorous mixing.

Then prepare idli or dosa as per choice. Enjoy delicious Horse gram and Ragi Dosa with coconut chutney and sambhar.

Neer Dosa Neer Dosa
The literal translation of Neer Dosa is “Water Dosa” in Kannada! Since my maternal family is from Mangalore, we used to have Neer Dosas during our childhood vacations in Mangalore and even get bored of it! But later when I had to make it myself and it didn’t ‘seem’ easy, I was missing and craving for it!!The batter for this dosa is very runny made of only Rice and water blended together; and salt of course. It is so light, that you can go on eating and never get full. At least that is the case with me, more so since I was not making this dosa as a regular item on my menu until I mastered it. I took some time to perfect Neer Dosa, not because it is difficult but because of the hype on how it requires a knack and special way of pouring the runny batter on to the tawa/griddle. My aunt is an expert in Neer dosa, she post graduated in Neer Dosa and can make these dosas even on a bad day in the kitchen.. what does that mean? I don’t know. Whenever I visit her, she makes sure I am stuffed with enough Neer dosas and it always ends in how to make it like her, so soft, yet crispy and amazing. Hence I watched it first hand at her place and finally decided to throw out all inhibitions away and started myself. And it came out very well. Guess we just need to take the first step!!
