Chicken Stew Recipe
Quick and easy stew recipe I learned from my mom
Cooking Instructions

Blend tomatoes, peppers, onion, garlic and ginger in water till it's smooth. Set it aside.

Put washed chicken in a pot, add onions, salt, spices and little oil. Leave to marinate for a bit. Cook the chicken on medium heat.
After a while add a little water and let it cook for a few minutes. When the chicken is done, remove the chicken from the pot and set aside the stock (broth).

Pour some vegetable oil, palm oil and some chopped onions into a pot on fire and let it fry for 30 seconds.
Add tomato paste and fry for 10 minutes (make sure to keep stirring to prevent burning).

Add your blended tomatoes and pepper mix and allow it to cook for about 30 minutes (or until it's bubbling vigorously).

Add some water to loosen it up. Add your chicken stock, salt, bullion cube, curry, thyme, crayfish and other spices of your choice. Stir and let it cook for a few minutes.
When the oil rises to the top, your stew is done.
