Ingredients

  1. 3over-ripe bananas, mashed
  2. 1/2 cupmelted butter
  3. 1/2 cupreal maple syrup (or sugar of choice)
  4. 2eggs, well beaten
  5. 1 cupunsweetened coconut flakes
  6. 1/2 cupmaraschino cherries, chopped
  7. 1/2 cupwalnuts, chopped
  8. 1/4 cupmini chocolate chips
  9. 2 cupsAP flour
  10. 1 tspbaking powder
  11. 1 tspbaking soda
  12. 1 tspcoconut extract
  13. 1/2 tspvanilla extract

Cooking Instructions

    Preheat oven 375

    Mix bananas, syrup, butter

  3. 3

    Add eggs, mix

  4. 4

    Add coconut, cherries, nuts, mix

  5. 5

    Add extracts

  6. 6

    Add flour, powder and soda

  7. 7

    Blend until just combined. Don’t over mix

  8. 8

    Grease or line muffin tins

  9. 9

    Scoop batter into each cup, filling about 2/3rds full

  10. 10

    Bake 20-25 minutes or until cake tester comes clean

  11. 11

    Let cool in pans

  12. 12

    Remove and allow to completely cool

  13. 13

    Store in airtight container

Started cooking/baking with Gram just as soon as I was old enough to stand in a chair, with her apron tied around my chest. Made my first solo Thanksgiving meal at age 8. Putting a new flair on classic nothern New England style cooking.
