The supermarkets here always have the 5 main pre-packed vegetables going very cheap the week everyone is buying their Christmas dinner accompaniments. I got sprouts, parsnips, carrots, potatoes and onions for 15p a bag at Tesco, apparently Asdas were even cheaper! A lot of people dislike sprouts but we eat them all year round. Some people like to pair them with bacon or chestnuts at Christmas and you could certainly use ham stock if you like in this if you want to tone the sprout flavour down. I opt for half and half chicken / vegetable stock and you can add extra water depending on how thick you prefer your soup. Some cheese straws or crusty bread completes the meal

Ingredients

4 servings
  1. 1.5 tbspsvegetable oil
  2. 700 g(2 pre-packed Tesco bags) brussels sprouts, trimmed
  3. 1large onion, chopped
  4. 3 clovesgarlic, chopped
  5. 1800 mlstock - vegetable, chicken or a mixture of both
  6. 3 tspbutter / margarine / dairy free spread
  7. 200 gfrozen peas
  8. Fresh black pepper to taste

Cooking Instructions

  1. 1

    Heat the oil and fry off the sprouts, onion and garlic for a few minutes to soften

  2. 2

    Add the stock and let simmer for 12 minutes, adding the peas for the final 3 minutes

  3. 3

    Puree the soup completely then stir in the butter and season to taste. Add more boiling water to thin the soup down if you want to

    Serve immediately with some nice bread or cheese straws - pizza is also a good choice lol
