Amaranth seeds are the powerhouses of nutrition loaded with Antioxidants, Flavanoids, Amino-acids and loads of Calcium and many more Vitamins and Minerals as such.
Amaranth seeds are packed with loads of Calcium which is absolutely beneficial for our bones and helps in maintaining overall health and well-being.
Not only this recipe is made instantly but also becomes a breeze if you already have roasted Amaranth seeds or Popcorn. Or even if you don't have them handy, it can be roasted in a jiffy. But of course it can be made within 30 minutes without any doubts. I have used Cane Jaggery powder here and not cubed one. Any Jaggery would do the job. Coconut or Palm Jaggery can also be used to make it even more healthier.

Ingredients

  1. 1 cupAmaranth seeds
  2. 1/4 cupJaggery powder
  3. 1 tbspGhee or Clarified Butter

Cooking Instructions

    Roast the amaranth seeds in a kadai so that they puff up and are absolutely light and delectable. I had them handy because I always do that in my free time and store for later use.

    In the meantime, melt jaggery powder in a pan with a tablespoon of water. As soon as it thickens and becomes foamy and frothy, add to it the roasted amaranth seeds.

    When it's okay to handle the heat, add a teaspoon of ghee and start making small sized balls. This measurements would give you around 7-8 balls.

    As they come down to the room temperature, the balls set perfectly and can be stored as well. They can be enjoyed right away as well while they are still a bit warm. They taste heavenly.

    Serve these healthy balls to your loved ones as an afterschool snack, at Tea-time or even as an anytime munchie for that choti moti bhook. Enjoy!
