Ingredients

  1. 1 kgbone in, skin on Chicken thighs and drumsticks
  2. Marinade
  3. 125 mlLemon Juice
  4. 6Garlic Cloves, minced
  5. 30 mlDijon mustard
  6. 30 mlHoney
  7. 15 mlDried Oregano
  8. 7.5 mlPaprika
  9. 15 mlOlive Oil
  10. 2.5 mlSalt
  11. 2.5 mlPepper
  12. Vegetables
  13. 5Potatoes, cut in 8 pieces
  14. 3Red Onions, cut in 8 pieces
  15. 1 cup (250 ml)chicken broth/stock, low sodium
  16. 400 gCherry Tomatoes, halved
  17. 125 gSundried Olives
  18. 2.5 mlSalt
  19. 2.5 mlPepper
  20. 15 mlOlive oil
  21. Fresh Basil, for garnish

Cooking Instructions

    Combine the Marinade ingredients in a bowl. Coat the Chicken with the Marinade and leave for 2-3 hours at room temperature or over night in the fridge.

    Preheat oven to 180°C.

    Place potatoes and onion in baking pan, top with chicken. Pour over the chicken stock then marinade from the bowl.

    Bake for 20 minutes, then remove from oven.

    Scatter over cherry tomatoes and dried Olives, drizzle everything with 1 tbsp olive oil, sprinkle with salt and pepper. Bake for a further 30 - 35 minutes.

    Turn up the oven to 250°C and switch to Grill.
    Grill a few minutes till Chicken is golden brown.

    Remove from oven, garnish with fresh Basil if using and serve!
