Ingredients

40 minutes
8 servings
  1. 1angel food cake mix
  2. 1 cancrushed pineapple
  3. Topping:
  4. 1 cupcoconut cream (original recipe called for evaporated milk)
  5. 1 cup (2 sticks)butter
  6. 1/2 cupsugar
  7. 1 cupchopped pecans
  8. 1 cupgrated coconut

Cooking Instructions

40 minutes

    Preheat oven to 350*.

  2. 2

    Mix cake mix and pineapple, scraping bowl to incorporate all the dry mix. Pour into parchment lined 9x13 pan. Bake for 35-45 minutes.

    Topping: during the last 5 minutes of baking. Start the topping.

    In saucepan, heat coconut cream, butter and sugar, stir constantly until sugar is dissolved and butter has melted. Whisk together until smooth. Stir in pecans and coconut. Set aside.

    Turn cake onto serving plate with a lip or return to pan once parchment has been removed. Use a wooden spoon handle and poke holes all over top.

    Pour topping evenly over entire cake. Let cool completely before serving. (Unless you live in our household, where cooled cake doesn’t exist.) This is good with ice cream.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
