Ingredients

  1. 1 boxuncooked lasagna noodles
  2. 1/4-1/2 cupcarrots (very small dices)
  3. 1/4-1/2 cupzucchini (very small dices)
  4. 1 headbroccoli (small chop)
  5. 2 jarsalfredo sauce
  6. 2 cupsricotta cheese
  7. 1egg
  8. 1/2-1 cupparmesan
  9. 2 cupsmozzarella cheese
  10. 3 clovesgarlic (minced)
  11. salt&pepper

Cooking Instructions

  1. 1

    Mix ricotta, 1/4 cup parmesan, and 1 cup mozzarella with egg and garlic, salt and pepper.

    In Crock-Pot, add enough sauce to cover bottom.

  3. 3

    Layer noodles, then ricotta mixture, chopped veggies, mozzarella (sprinkle with extra parmesan), and more sauce.

    Repeat layers 2 more times. Ending with noodles, sauce, and mozzarella.

  5. 5

    Low: 4-6 hours

Living up in the mountains, not always having the gas, time, or best weather conditions to get to town for groceries. We run out of things quickly and I have to use what I have. Though I now have a stove and oven, many of my recipes here were from when I didnt. I've had to get quite creative, and find other ways to cook. Like in a toaster oven and an electric skillet. I thought if anyone else has my same issues it'd be great to share my simple minimalist recipes. And find some great ones too.
