  2. 300 gramsall purpose(plain) flour
  3. 1 tbspground cinnamon
  4. 100 gramswalnuts, chopped
  5. 100 gramsdesiccated coconut
  6. 300 gramsgrated carrots
  7. 300 mllight vegetable oil
  8. 1 tbspvanilla extract
  9. 125 gramswholemeal flour
  10. 300 gramssuperfine (caster) sugar
  11. 4 largeeggs, lightly beaten

    Preheat the oven to 180C. Grease and line 900 grams loaf pan.

    Sift the all purpose flour, wholemeal flour, baking powder and ground cinnamon into a bowl.

    Stir in the nuts, coconut and carrots

  4. 4

    Pour the oil, vanilla and sugar into a bowl and whisk together, then whisk in the eggs.

    Add the dry ingredients to the wet ingredients. Combine everything together.

    Pour the mixture into the pan. Bake for 45 minutes or until lightly browned. Insert a toothpick into the center of the bread. If it comes out clean, the bread is ready.
