Ingredients

  1. 2baking potatoes, peeled & cubed
  2. 1 cansweet corn
  3. 1 cupshredded cheddar cheese
  4. 3/4 cupgluten-free baking mix (you can use reg baking mix)
  5. 1 3/4 cupsoy milk (or milk of your choice)
  6. 2eggs
  7. 3/4 tspsalt
  8. 1/2 tspItalian seasoning
  9. 1/8 tsp ground black pepper

Cooking Instructions

  1. 1

    Mix all ingredients together. Pour into greased baking dish.

  2. 2

    Bake @ 350°F for 45 minutes to 1 hour or until a fork can easily be inserted into the potatoes.

  3. 3

    Let cool for 5 minutes before serving.
