Leftovers Hash and Eggs

harlequinn823 @hollyqueue
Just about any kind of dinner leftovers can be turned into a delicious breakfast by chopping it up and adding eggs. This is a great way to use up leftovers when there's not quite enough for another meal by itself, but you don't want to waste it.
Cooking Instructions
- 1
Chop leftovers. (I used leftover broccoli and steak fries with bacon and cheese)
- 2
Melt butter in a pan.
- 3
Add chopped leftovers to the pan and stir until they're heated through.
- 4
Crack the eggs and add them to the pan. Stir to break up yolks and blend with the leftovers.
- 5
Keep cooking until the eggs are fully cooked.
- 6
Serve over toast, with your favorite sauce (salsa, bbq, hot sauce, Worcestershire, etc), if desired.

Breakfast hash
I tend to talk a big breakfast game when I'm drunk. This is a great way to get the fuck out of dodge when catering to hungover friends that slept on your couch and make them forget about the eggs florentine you promised.

Hearty Breakfast Hash
*To anyone following my recipes---Remember that "debris" I harvested from my pho soup.... delicious, well spiced gelatinous fat and bits of meat. It smelled like a corn beef pot roast a bit. So I thought, potatoe, onion hash, left over brisket, cheese with an egg on top. A great way to make the delicious flavours of my pho be reborn as this breakfast brainstorm. Needed to share. *;-)

Hash and Eggs
Grew up eating this, the key is getting the hash a bit crunchy but not burning it.

Butternut Squash Hash N' Eggs
Trying to cut back on carbs for health reasons and experimenting with alternatives to the norm I decided to try making a hash replacing the standard potatoes with butternut squash. The hubby said, "Mmmmmm" and went back for seconds. That's a success in my book! For those watching their cholesterol too, simply separate the yolks from the eggs and fill the wells with just the whites, and use turkey sausage. 40 minutes to prepare calculates the max cooking time in the oven. :)

Roast Beef Hash
I only cook a formal meal once or twice a week, so I always have leftovers. This is just one of many easy ways to use up leftover roast.

Hamburger and Potato Hash
Three of my Granddaughters I watch regularly. All children have different likes and dislikes. One doesn't like sandwiches, unless it's fried bread. She doesn't even like hamburger's. So I try to make things all of them like. Here is one of them. This can be served with Heinz tomato Ketchup, barbeque sauce, or anyone of the following steak sauces, Heinz 57, A1, or HP steak sauces. You can eat it as we call it plain. Add a side of fried green beans.

Hash Brown Breakfast
Eggs and potatoes are loved in our house. We can happily eat this for dinner. Once everything is shredded, it becomes a quick meal. You can easily add favorites to enhance this dish. Sour cream and chives on top. My serrano tomatillo salsa on the side, a hot kick to it is great! So I hope you enjoy for breakfast, brunch or dinner!

Healthy Chicken Hash Browns
I made a healthy and filling dish with a piece of breast meat!It may be difficult to fry if you coat the potatoes with a lot of katakuriko potato starch flour. Adjust the amount depending on the size of the potatoes you use.You can brown the chicken beautifully if you fry them pressing down with a spatula. The breast meat hardens if you over cook it. Adjust the cooking time depending on the thickness of the meat. It's good with ketchup and mayonnaise. Recipe by Jina shufu

"Savory" Corned Beef Hash
I tend to look for this on good breakfast menus when I know it’s not prepared from a can. There’s just no substitute for the real - deal. After a traditional "Irish" meal of corned beef, I use the leftovers (see my recipe) for the next day's breakfast (or dinner). Traditionally it's topped with an egg either poached or fried.

Anthony's Corned Beef and Hash Omelet
Actually a spinoff of an omelet with corned beef and hash without cheese i had once. Came home and made it my own and it's really good.

Crunchy Easy Hash Browns
I make this when I become tired of French fries. It's a new and tasty discovery when it's shaped differently. This recipe uses the starch from the potatoes. It won't stick if soaked in water. After some time, it'll become slightly pink (because of the remaining starch). The pink disappears when fried.P.S.: Use more oil for a crunchy finish. Add some as you fry. For 10 servings (5 cm [2.0 in] in diameter). Recipe by Shinamoro-rus
