This is my fourth flourless cake, and again I was really happy with the results. It did not rise as high as the others but also didn't deflate.! The peanut butter flavor comes through and the little chocolate chips are a nice chocolate surprise!

Ingredients

  1. 8large eggs.separated
  2. 3/4 cupcreamy peanut butter
  3. 2 tbspsour cream
  4. 2/3 cupgranulated sugar
  5. 1 tspvanilla extract
  6. 1/3 cupmini semi sweet chocolate chips
  7. GARNISH TOPPINGS
  8. 1recipe stabalized whipped cream, recipe attached below
  9. 1/4 cupdark chocolate shavings
  10. 1/4 cupchopped peanuts

Cooking Instructions

    Preheat oven to 350. Spray a 9 Inch cake pan with non stick spray. Line a baking sheet with foil. Place prepared baking pan on foil lined sheet.pan.( bake cake on this foil lined pan )

    In a large bowl whip egg yolks, peanut butter, sugar, sour cream and vanilla.until light and creamy about 3 to 5 minutes.

    In another large bowl with dry clean beaters beat egg whites until they hold stiff peaks

    Fold egg whites into yolk/sugar mixture in 3 additions. Combine gently but thoroughly being careful not to deflate. Pour into prepared pan.

    Add chocolate chips to the top. Some will sink halfway while baking. Do not fold them into batter as they will just sink to the bottom when baking and stick to the pan bottom.

    Bake about 30 minutes until toothpick just comes out clean. Do not overbake, but be sure center is cooked

    Cool.in pan on rack 30 minutes. Run a small knife around edges to loosen. Then completely cool on rack or plate.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
