Ingredients

  1. 1/3 cupbulgur (cracked wheat)
  2. 1 bunchgreen onions, sliced
  3. 1tomato, diced
  4. 1/2English cucumber, finely chopped
  5. 1parsley, chopped
  6. 1/4 cupolive oil
  7. 1/4 cupfresh lemon juice
  8. 1/4 tspsalt
  9. 1 pinchcracked black pepper

Cooking Instructions

    rinse bulgur in fine mesh sieve. cover with boiling water and let soak 20 minutes.

    meanwhile, combine remaining ingredients.

    rinse bulgur in cold water and squeeze excess water from it.

  4. 4

    stir bulgur into parsley mixture. chill at least 1 hour before serving.
