Begin browning rice in large skillet with butter

Add 2 cups water to rice and cover, reduce to simmer for 20 minutes

Rub spices into chicken

Bake chicken for 25 minutes

When rice is finished, remove from head and stir thoroughly

Cook broccoli as directed

When chicken is done, cut into small chucks and add to rice

This is inexpensive, but rich and flavorful. I use whatever i have on hand for the chicken broth, I'll use homemade, canned or bouillon and water, it all works really well. I use extra long grain rice from La Preferida Brand, because it gets so creamy. I make some green beans with onion to serve with it, cuz I like to mix it together!

If you use this method cut the 2 cups water to be mixed in the casserole into 1 cup water

Hola friends!!! Here’s a little bit of nothing I made that just tastes so good I had to share. Plenty of leftovers to make a nice pot of this golden beauty. This is basic and can be made in any shape form or fashion. Add ons for days. I like peas in mine but today I went bare bones. I roasted the chicken and made the rice yesterday just so I could make this today.
