Ingredients

  1. 1 boxBow tie pasta
  2. 1 boxFrozen chopped spinach (thaw beforehand)
  3. 4 tbspButter
  4. 1/4 cupOlive oil ( eyeball it, I just drizzle onto the pasta from the bottle
  5. 3 cloveGarlic chopped or crushed with a garlic press
  6. 1/2 cupParmesan cheese
  7. 1 smallJar of pimento (drained)
  8. 1 pinchSalt and pepper to taste
  9. 1 bunchFresh parsley, chopped

Cooking Instructions

    Cook the box of bow tie pasta according to directions, 3 minutes before pasta is done, toss the thawed spinach into the boiling pot, drain do not rinse.In the same pot sauté garlic in butter in the same pot for a few minutes then return the pasta/spinach to the pot. Add the rest of the ingredients and mix thoroughly and serve.
