At first I wanted to follow up a recipe but since I didn't have all the ingredients that were required I ended up making my own recipe
Cooking Instructions
- 1
Start boiling the rice separately together with the 5 cups of water
- 2
Meantime preheat the oil in a pot
- 3
Add the chopped onion and fry it until it starts to brown and softer
- 4
Add the minced meat over the onion and cook, using a spatula to break up the pieces, for 10-12 minutes, until it changes colour
- 5
Add all the spices
- 6
Add the tomato paste and stir for about 2 minutes
- 7
Add the beans and stir for about 2 minutes
- 8
Add the jasmine rice together with the water where it was boiled and stir for about 10-15 minutes
- 9
Serve with pickles! :)

Monday Red Beans and Rice
In the New Orleans area, Red Beans and Rice is a tradition on Mondays. In times past, leftover meats from Sunday became part of the recipe for Red Beans and Rice. Since there are no leftovers in my house, I have come to rely on Andouille sausage and ham chunks for the meat ingredients. I take short cuts because traditional southern recipes can be an all day long affair for which I do not have time.
