Red Beans and Rice

This taste great with my Corn Mocque Choux recipe.

Ingredients

4-6 servings
  1. 1 ouncebutter
  2. 4 clovesgarlic -- chopped
  3. 2 linksAndouille Sausage, diced (optional)
  4. 1 cuprice
  5. 2 cupschicken stock (You may need a little extra for the rice)
  6. 1 tablespooncrystal hot sauce
  7. 1 teaspoonpaprika
  8. 1/4of yellow bell pepper -- diced small
  9. 1/2 teaspoonsalt
  10. 1 teaspooncajun seasoning
  11. 14.5 ouncecan,red beans,drained
  12. 3each scallions add at the end -- cut bias /on an angle

Cooking Instructions

  1. 1

    Melt the butter in a sauce pan over a medium heat, add the garlic and red bell peppers saute for 2 minutes (If you are using the sausage add with the garlic and peppers)

  2. 2

    Add the rice stir for 30 seconds add then add the remaining ingredients (add scallions at the end)

  3. 3

    Simmer lightly with a lid until the rice is tender and done about 20-30 minutes.

    Add more stock if needed...Do not burn:)

  5. 5

    Mix in the scallions to finish.
