Ingredients

  1. Shortbread crust
  2. 1/2 cupunsalted butter (room temp)
  3. 1/4 cupicing sugar
  4. 1 cupall-purpose flour
  5. 1/8tspn salt
  6. Lemon Filling
  7. 1 cupgranulated sugar
  8. 2eggs
  9. 1/3 cupfresh lemon juice
  10. 1 tbspgrated lemon zest
  11. 2 tbspall-purpose flour

Cooking Instructions

    Preheat oven to 350℉ and Line an 8x8 square baking pan with foil and spray with nonstick cooking spray

    Using an electric mixer beat the icing sugar and butter until creamy

  3. 3

    add flour and salt and beat until dough looks crumbly

  4. 4

    Press this into the bottom of your pan and pregame it for about 18-20 mins or until the sides start to brown a bit

    Remove from oven and place pan on cooling rack to cool while you prep your filling

  6. 6

    For the filling in a mixer add the sugar and eggs and beat until smooth.

    Next add the lemon juice and zest and combine that

  8. 8

    Fold in the flour and pour filling over shortbread crust

  9. 9

    Bake for about 20 minutes or until filling is set

  10. 10

    Allow to cool for a couple hours before cutting into square and dust with powdered sugar for a nice touch!
