Ingredients

  1. shrimp toast
  2. 6 largefresh cleaned shrimp, tails removed
  3. 2 slicewhite bread with crusts cut off
  4. 1scallion
  5. 1 clovegarlic
  6. 1/2 tbspcorn starch
  7. 1 tspsoy sauce
  8. 1/8 tspsalt
  9. 1several cups of oil used to deep fry, amount varies by method used for frying

Cooking Instructions

    In food processor, add all ingredients except oil. Shrimp should be cleaned, shelled and tail removed. Pulse several times to achieve a fine chop. Do not pulse into a paste!

    On one slice of bread with crust removed, spread with shrimp mixture. Top with other slice of bread. Cut bread into four triangles.

    In deep fryer or deep skillet bring oil to 350°F. Fry shrimp toast 1-2 minutes per side. You are looking for a light golden brown color.

    I only make the one serving but you may easily double and triple recipe. I suggest making enough to enjoy freshly made. Leftovers are not suggested.
