Scrambled Egg Salad

Ingredients

  1. 1 dozenEggs
  2. 1/2 stickButter or enough olive oil to scramble the eggs
  3. 1/4 cupMayo, more or less to taste
  4. 3 tbspMustard, more or less to taste
  5. 1/4 cupDill pickle relish, or leave it out
  6. Salt and pepper to taste

Cooking Instructions

    This is more of a method rather than a recipe. You can use your own egg salad recipe with this.

    Melt 1/2 stick of butter in a nonstick skillet over med low heat. In another bowl, crack 12 eggs and break them up with a fork. Slow scramble them over med low heat. I do this with a rubber spatula. Gently fold and push the eggs as you cook them. Don't let Let them brown at all. Cook to desired doneness and immediately put in a bowl to cool.

    I've always told my girls, if the skillet is clean when you remove the eggs, you did it right.

    Dress your eggs with all your ingredients and eat it now instead of later.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
