Ingredients

  1. chicken
  2. 2 lbchicken breasts and thighs total
  3. spices
  4. 1 tspground cinnamon
  5. 1 tspground black pepper
  6. 1/4 tspground cloves
  7. 1/4 tspred pepper flakes
  8. marinade
  9. 4 tsp minced garlic
  10. 1/2 tspginger powder
  11. 1/4 cupchopped cilantro
  12. 2 largebay leaf
  13. 2 tbspsaffron oil
  14. sauce
  15. 1 mediumonion chopped coarsely
  16. 2 tbspsaffron oil
  17. 1 tspkosher salt
  18. 1 tspfresh ground pepper
  19. 1/2 largepreserved lemon
  20. 1/2 cupgreen olives
  21. 1 cupchicken broth
  22. garnish
  23. 2 tbsppreserved lemon juice
  24. 1 tspchopped parsley
  25. 1/2 cupblack ripened olives

Cooking Instructions

    In a large bowl or zip lock bag, add the chicken, the oil, spices, garlic, ginger, cilantro, and saffron oil. Mix well. Add bay leaves and chicken, rubbing the marinade over all the pieces. refrigerate for 2 hours or over night.

    Remove the chicken from the marinade. and reserve marinade.

    Pat chicken dry and season with salt and pepper. In a tagine or large casserole over medium high heat add 2 tablespoons saffron oil.

    Add chicken breast and lightly brown on both sides, about 5 minutes. Then add onions and cook until just starting to brown, about 3 minutes.

    Take half of the preserved lemon reserve the other half, so two quarters separate. Slice the peeling into strips add to chicken.

    Add reserved marinade, olives, and chicken stock. Cover tightly and cook over medium low heat for 30 to 35 minutes, or until chicken is done.

    Take some preserved lemon juice, parsley, and remaining preserved lemon. Add to chicken to garnish.
