Tagine style chicken with preserved lemons

Cooking Instructions

In a large bowl or zip lock bag, add the chicken, the oil, spices, garlic, ginger, cilantro, and saffron oil. Mix well. Add bay leaves and chicken, rubbing the marinade over all the pieces. refrigerate for 2 hours or over night.

Remove the chicken from the marinade. and reserve marinade.

Pat chicken dry and season with salt and pepper. In a tagine or large casserole over medium high heat add 2 tablespoons saffron oil.

Add chicken breast and lightly brown on both sides, about 5 minutes. Then add onions and cook until just starting to brown, about 3 minutes.

Take half of the preserved lemon reserve the other half, so two quarters separate. Slice the peeling into strips add to chicken.

Add reserved marinade, olives, and chicken stock. Cover tightly and cook over medium low heat for 30 to 35 minutes, or until chicken is done.

Take some preserved lemon juice, parsley, and remaining preserved lemon. Add to chicken to garnish.

I use salted lemons I keep on hand for flavoring. The taste of the dish varies depending on how long the lemons have been preserved, so adjust the seasoning before serving. The lemons become soft as they age and tend to fall apart if you stir them too hard. Remove the lemons before serving.I used chicken thighs this time, but this dish also has a nice, light taste when made with chicken breast. Coating the meat with flour and frying it results in a thick sauce that tends to burn easily. Be sure to keep an eye on it and adjust the heat as necessary! This is my version of this popular cuisine, where I gave an Indian touch by adding some crushed kasuri methi and yoghurt. Rest of the spices used are very much a part of Moroccan cuisine. This is a yummy dish with a subtle flavour of the rose water, which can be substituted with saffron. There is a crunch to every bite with the presence of the dry fruits. Some sliced veggies like carrots and potatoes along with dates, prunes and apricots too, can be added.
