Ingredients

  1. 8 ozsemi sweet chocolate chips
  2. 1/2 cup+ 2 Tablespoons strong unsweetened coffee
  3. 1/2 cupconfectioners sugar
  4. 2 cupheavy whipping cream
  5. 1/2 tspvanilla extract
  6. 24chocolate covered coffee beans
  7. 1/4 cupshaved chocolate a ny kind you like
  8. 1sweetened whipped cream for topping

Cooking Instructions

    In a saucepan gently melt chocolate with coffee JUST until melted and smooth stir at all time do not let it boil, remove from heat and cool to room temperature

    In a large chilled bowl beat heavy cream until starting to thicken, add sugar and vanilla, beat in than add chocolate/coffee mixture and beat until just creamy. Spoon into decorative glasses and chill at least 2 hours or overnight

    Right before serving top with the sweetened whipped cream, divide chocolate shavings evenly among servings and put 3 chocolate covered coffee beans on top

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
