When I was a kid, I hated beet(root), but now I love it...only, not pickled in a jar...I love them like this!

Ingredients

  1. 1 packagescooked peeled beets (like Trader Joe's Steamed & Peeled Baby Beets)
  2. dressing
  3. 2 tspfresh thyme leaves
  4. 2 tspbalsamic vinegar
  5. 2 tspextra virgin olive oil
  6. 2 tspclear honey
  7. 2 tspdijon mustard
  8. 1 pinchsalt and black pepper
  9. topping
  10. 1/3 cupcrumbled feta cheese
  11. 5thyme flowers (optional)

Cooking Instructions

  1. 1

    Heat oven to 200 C

  2. 2

    Open beets and place in a baking dish, slice them into quarters

  3. 3

    Mix dressing ingredients and pour over beets

  4. 4

    Cook the beets for 15 minutes or until they are hot and syrupy, turn them around in the dressing once or twice

  5. 5

    Serve beets with the crumbled feta over the top and the thyme flowers (if using), and eat them wholewheat bread or pittas
