Cooking Instructions

Cut, wash and slice yam. Drain off water and add seasoning and salt with the cornflour

Mix with hand properly then deep fry until golden brown
- 3
Place yam on a sieve to drain off excess oil.

In another pot on heat, pour in the sliced onions, tomato and pepper and stir fry until dried then add seasoning and salt
- 5
Season the shrimps with little seasoning and fry then add to sauce.

I used to coat the shrimp in katakuriko and then fry them, but then I saw recipe that boiled them so I decided to try it. Since it turned out quite delicious, I've started making this dish that way. These also taste good if you coat the shrimp in tempura coating and fry them, before seasoning them with the sauce. It will become a very filling dish.Please adjust the amount of doubanjiang to your preferences. Don't boil the shrimp for too long or they will become tough. These shrimp and crab enchialadas feaure the hatch chili, a moderately spicy delicious chili that I learned about here on this app from MMOBRIAN. Our local market just started having them available . I bought a few and roasted and stuffed them with a wild rice and cheese mix and we loved the spicy but not overpowering heat and delicious flavor. This brought me to thinking they would make a great sauce for enchalaradas. The dish turned out so good!
